  • 4 medium onions, sliced
  • ½ C chicken stock
  • ¼ C Ziyad Brand Spanish Pine Nuts
  • ¼ C Ziyad Sumack
  • ¼ C Sultan Extra Virgin Olive Oil
  • Black pepper
  • Salt
  • 4 small (or 2 large) loaves of bread

Directions

Wash chicken pieces with cold water.

Preheat oven to 425 Degrees F.

  • 1 onion

Directions

Carefully clean and rinse each green pepper.

  • Juice of one lemon
  • 2 T cornstarch
  • ¼ c water
  • Salt and pepper to taste

Directions

Cook artichoke hearts according to package.

Toast almonds or pinenuts. Set aside. Combine cornstarch and water. Let sit until dissolved.

In large deep pot, brown meat in oil.

Directions

Preheat oven to 450 -500 F ; Rub Chicken pieces with Lemon. Season throughout with Salt, Pepper. Set aside.

In large skillet, caramelize onions in 2 Tbls of the oil.

  • 1 Jumbo Lima Beans
  • Sultan Extra Virgin Olive Oil
  • Seasonings including Cumin, garlic
  • 1 onion, diced
  • 4 lbs of oxtail
  • Dice 2 tomatoes

Directions

Place beans in large saucepan and cover with water about 3 inches.

Bring the water to a boil and then remove it from the heat. Cover the lima beans in the hot water and let stand 2 hours. Then drain and set aside.

  • 1 pounds diced/ground lamb
  • 1 can tomatoes or 2 fresh tomatoes
  • 1/2 cup of Sultan Brand Extra Virgin Olive Oil
  • 1 onion

Directions

Carefully clean and rinse each zucchini. Cut onion in half. Dice half. Cut remaining half longwise. Mix one cup of rice and 4 pounds of diced lamb. Spice.

If using canned diced tomatoes, empty juice into mix. Add 1/6th cup of olive oil.

  • 4 pounds fresh beef
  • 1/6 cup of Sultan Brand Extra Virgin olive oil
  • 1/6
  •  cup of lemon juice
  • Spices (Garlic, cumin, salt, pepper)
  • Whole lemon
  • Vegetables (green peppers, green onions, tomatoes.)
  • Wood skewers
  • Delightful family meal

Directions

  • Soak 8 wooden skewers in water for 1 hour to reducing burning.
  • Cut beef into cubes of about 1 inch in thickness.
  • Place in plate and soak in 1/6 cup lemon juice, 1/6 cup olive oil
  • Spice to preference.
  • Shank with wood kabob spears and grill on open flame until tender.
  • Sprinkle with slices of vegetables, wedges of lemon, serve hot

Directions

(Harissa and Semolina cake are very similar. Semolina cakes, though include eggs giving it more of a lighter cake texture while harissa is a much sweeter, thicker texture. Also called basbosa cake.)
Mix semolina, sugar and butter in a medium mixing bowl with electric mixer until light and fluffy. Add eggs one at a time, beating well between additions.
Stir in semolina and baking soda, add Dana Plain Yogurt, Attar.
Spread mixture evenly into greased 20x 30 cm with nuts. Bake moderate heat 30 minutes.
Mix water and sugar in medium pan, strring over medium heat without boiling until sugar is dissolved. Stir in juice. Simmer 7 minutes or until slightly thickened (do not allow syrup to change color )
Place whole almond in center of each cake cut.
Pour hot syrup over hot cake leave in pan until syrup has absorbed all syrup then serve warm or cold.
